The most common reason people give me for drinking instant coffee is that they don’t have time to make anything else.

I’ve just timed how long it takes my electric kettle to boil – 2 minutes. So, let’s say an instant coffee takes you 2 1/2 minutes to brew. I can take fresh beans, grind and brew them in a variety of different ways in around 5 minutes. Are you really saying that you are so time poor that you can’t spare an extra 2 1/2 minutes to brew vastly superior coffee? If you drink four cups of coffee a day, all you need to find is an extra 10 minutes?

Brewing great coffee is easy once you’ve worked out what you’re doing. For example: Take a cafetière (or french press):

18g of coffee per person;

grind it coarsely;

put it in the cafetière;

add hot water;

leave to steep for about 4 minutes; and

pour and drink.

And it’s not just drinking coffee that can bring pleasure. Use the routine of making coffee to be that all important place of sanctuary in a mad, hectic day at work/home. Just taking time away from the laptop or the hustle and bustle of daily life to ‘create’ a cup of coffee, just the way you like it, can be special. Make the process as therapeutical as the drink is refreshing and uplifting.

So don’t tell me you don’t have time. Build in 10 minutes in your day to have a PROPER coffee break – you’ll feel so much for it!

I get a lot of questions from customers, often new to specialty coffee, asking me to explain various coffee terms, brewing methods and how to adapt their coffee-making techniques depending on the type of coffee they buy. So in this blog, I will try to cover many of the common areas where questions and problems arise.

You must remember, unlike great wine where you just need to open the bottle, let it breathe and drink it, great coffee involves the participation of the brewer. You can buy the best coffee in the world but, if its brewed poorly, no-one will know.

The great news, however, is that the definition of a great cup of coffee is one that tastes exactly how you like it! Of course, in terms of brewing coffee, it helps to understand some basic principles, appreciate the differences between brewing methods, gain a greater appreciation of coffee terms and what different coffee beans – and the way they are roasted – bring to the table. But the idea is to use the knowledge you acquire to make the coffee that you, your family and friends enjoy!
